Air con is defo switched off, but every time I go to the car to start it the air con light is on and I have to turn it off?
Would the air con being on cause this?

I'm curious about the operation of these fans and there seem to be others here also wondering, to judge by the posts. After a journey mine seems to be almost always on, even if the temp gauge isn't particularly high. What I find most suspicious is that if I turn the ignition back on immediately after switching off the engine, the fans doesn't come back on. I don't know if it's purely temperature that's activating it or not. This happens if I haven't operated the a/c at all during the journey - it doesnt work anyway! I know the fan operation is linked into the a/c so this is what has got me particularly interested in understanding it. I hadn't thought to switch on and wait to see if the fans cut in after a few seconds so I must try that, maybe I've turned off too hastily and the temp switch really does wnat the fan on. I notice the smaller fan relay adjacent to the fuse box is very warm after a run in to work (40mins).
Yeah i have this exact same thing. Previously when a fan started coming on in my old - non alfa-car it was because my water was low due to a small leak in my radiator. I know this isnt the case with my alfa as i have checked. But it worries me every time it comes on - its a noisy bugger too.
Most of the forums seems to think that 90 is the normal temperature and that the fans coming on is normal so i guess that is the way i will look at it. Will try messing with the air con too.
I found that the A/C comes on automatically (climate control) even ehan all you want is cold air from outside. The manual gives a blow-by-blow description of what to do to turn the A/C to manual and this fixed it for me.
Look at the three control knobs, 1,2 and 3. With the key in MAR position, turn 1 as far to the right as it will go, 2 all the way to the left and 3 all the way to the right. Turn the ignition on, but not the engine, then turn the second knob to 1, then 0, then 1, then back to 0 again. Turn off ignition. A/C is not set to MANUAL.
THis might sound like a cheat for a Playstation game...but it's in the manual and it works!
This didn't work for me, so I finally found my manual and it says the code is:
*Key to STOP position
*1st knob to max heat (clockwise till end)
*2nd knob to positon 0
*3rd knob anti-clockwise till the end
*key to MAR position (basicly menas ignition ON , but do not start engine! )
*turn 2nd knob AUTO-0-Auto-0
*key to STOP position.
This time the AC switched to manual
P.S. my car is PII, maybe thats where the difference is.

Thermostat opens @ 82 C. Fans start @ approx. 90-95. Temp should never exceed 100 C.
If You switch on AC, one fan should run constanlty.
Make experiment on your driveway. Heat up the cars engine, keep an eye on the temp gauge, watch for the red light, if that switches ON but still no fan runing, something is wrong with fans. Stop engine asap.
But before this, check all contacts for fan control and fuses
