Just wondering what grade/viscosity of engine oil should i use in my 156 2.5 V6?

Std is 10W40 semi with the option for 10W60 synthetic.
In your climate I'd lean more towards the 10W60 though.

Basic ACEA A3 and API SL

If it covers SG as well as SL, then that is a bonus.

does it matter if i can't get both of those matching? i've only been able to find ACEA A3 with the correct viscosity but no API SL or SG.

Most will be higher than SL now.

found some reasonably price Selenia 20K. Should i get it? Or would you recommend getting some 10W-60 Castrol or Valvoline or something like that?

stick with a 10w-40... 10w-60 is much thicker, only going to contribute to cold start wear.... only reason to go thicker is if yours is using oil at the moment..
