Is there a list somewhere, of torque settings for suspension etc.
The ones I'm interested in right now are: rear shock absorber mounting bolts and front brake caliper mounting bolts (GTV TS)

Yes, there are torque settings in the workshop manuals. My set of original hard copy manuals were bought when I purchased my GTV. Now they are available on disc at not very much.

Rear damper settings are:-

Top 59 ~ 72 Nm
Bottom 79 ~ 98 Nm.

Front brake caliper bolts are:-

22 ~ 32 Nm.

Oddly for Spider they are. 31 ~ 38 Nm.
