can i get away with changing this without draining the whole cooling system?

just a thought as the coolant is 2 months old

You will loose a little.
Try to collect it if you can, but I know it is in a tricky location.
There is an inspection cover in the top of the gearbox bellhousing directly below the stat, so block that with a rag otherwise the lost coolant will go straight in there!!

You don't need to drain the whole system.
