If the fans are not coming on at about 95degC then it must be the low speed fan sensor, assuming the fans in the VR6 have the same theory as the 156

First thing is whether the fans are coming on. You should be able to unplug the wiring and bridge the connections in the multi-pin plug (paperclips and split pins are good for this) to make the fan run all the time. If the fan doesn't run with the contacts bridged it's probably the fuse or a knackered motor.

Once you've bottomed the fan, if it's still boiling up and the 'stat, rad and pump are definitely good, I guess it's time to look at the head gasket.
