Didn’t use the car yesterday and this morning the instrument binnacle and rear view mirror were condensated. Surely this shouldn’t be happening in a 65 plate car?

Happens in this weather especially when it’s a warm day and then a freezing night for example.

Some of those gel pack dehumidifiers should sort it or lessen

Warm air will hold onto more water vapour than cold. You contributed by breathing inside your car. When you got out the air cooled down increasing humidity to 100%, then just slightly cooler (look up dew point) releases the extra water, particularly on surfaces such as glass.

Inside the carpets are dry and no water in the boot. Still was condensation...
Are you running the climate control on auto? (= with a/c)
I assume not.

Without a/c moisture builds up. See armoore's comment.
