My hand brake warning light on the dash started flickering on and off randomly for the last couple of days while driving. I checked the brake fluid level which is ok, so I have just changed the brake fluid bottle cap/ level sensor for a spare one I had.

Going for a drive now, hope that's cures it.

If its the fluid level sensor the light should just stay on.

Sound likes some sort of funky wiring issue to me!!!

The sensor employs a magnetic float that moves with the liquid surface, actuating a hermetically sealed "reed switch" in the stem. When the reed switch starts to fail then you will get a false signal being sent to the light.

I changed the cap and the fault was fixed.
