In past years I have always just walked into a local supermarket and grabbed a chilled turkey from the refridgerator a couple of days before Xmas with no problem. This year however, all the supermarkets seem to have signs up about ordering turkeys. Have I missed something? Are they becoming an 'order only' item?

I ordered the goose and gammon from the Butcher's Hall (pub farm shop in Forest Green). The goose itself is from a National Trust farm just down the road.

...now I'm trying to find the best recipe for a chorizo stuffing...

It's the supermarkets way of whupping up hysteria that if you don't get it now they'll be none left. I just buy a ham or a roast beef in protest :)
