Not nice sweet-- radiator coolant sweet.
Does this mean my heater core has gone?
If so, is this something that I can hold off changing, or are there dire consequences? I'm losing about a couple of tablespoons of water each day.

However, since it was replaced it smells very strongly whenever its "stressed" (like hill starts, fast getaways etc)...
When we changed the oil on the Alfa, we noticed it was very petrolly smelly.
