Problem is rare in which country - I have discovered that well done in France is equally to rare here and mooing in Canada

Yeah, your right about that, ask for it rare in France and you've to kill it before you can eat it
Even medium/rare in France can be nearly blue

You know thats a good point, you have to know how someone classes medium etc. before you can order, best thing is get some top quality fillet, season slightly and sear both sides quickly, on a hot Barbie, and eat it.
I have a friend who rears beef cattle and he sends his to a really good abbotoir, who prep it to his requirements, ie hung for 3 weeks, it is head and shoulders above anything you can buy, but really cattle should be left another six months before slaughter (law says 30 months in this country ) the last bullock he sent at 36 months was the best steak I've ever had, cooking it was a travesty....
so thats Rare for me.

I don't tend to dare go for rare because of the aforementioned problem with some chefs thinking they're cooking genii and decided to chow this by always cooking the steak 1 category less than you actually ask for. Therefore I always ask for medium rare.

"Saignant" That's French rare, which sits between
bleu and rare on the english scale.

Ordering "well done" Is the same as asking for
the oldest, nastiest piece of meat the chef can find.

un steak bleu, very rare steak, raw
un steak saignant, rare steak, very rare
un steak à point, medium steak, rare
un steak bien cuit, well done steak, medium



What you get in England:

Asked for, what you get:
Bleu, medium

Medium, very well done
Well done, burnt

medium/rare for me in england. medium in france. it has to be a blindingly good fillet of steak for me to eat it very rare

I like my steak just to say pink in the middle but without any blood oozing out of it.

Rare/blue Just sear it on both sides, put on some Montreal steak spice and serve it up yumm..................only if this is a good steak.

Currently reading Anthony Bourdains' book "Kitchen Confidential" and there is a rather interesting paragraph where he talks about the shelf in the chiller of rather dodgy, unpleasant meat labelled "Keep for well done"

He says that it is the perfect way to get rid of those cuts and ensure minimum waste
