Obviously, there are certain combinations that work better than others. Black with cream leather is a fav of mine, as is white with red leather. My car is a light blue, not sure of the exact name, with black leather and it looks ok but nothing special. I have seen some bizarre combos and some have worked others havent. Just yesterday a customer parked outside work in a dark blue Vanquish with green leather and it didnt look as bad as it sounds to be honest, although not something i would have chosen.
As far as dashboards go, i have always preferred light colours to the standard black. I hate wood interiors in any guise, and would rather eat my own feet than have any of it sprayed, i.e. red, blue, green whatever, and think people that do it should be killed on sight. I'm not a huge fan of white dials either, to me they look tacky.
