I like the 'knob, not so sure on the handbrake personally, but each time to their own.

I'm sticking to the original leather gear knob, I normally change steering wheels, gear knobs and handbrakes, but I actually like the feel of the leather one, plus I don't want to change too much stuff as She's a Cup

With the wheels why don't you just go for a best possible match?

Ask around a few places, find the one who seems most confident that they can get as close as possible to the original finish and then proceed with them? If you like the stock looks, then a shade or 2 lighter/darker would seem to suit you more than say, going for a gunmetal grey look.
