The engine oil is cooled by the heat exchanger, and the coolant in the heat exchanger is cooled by the coolant radiator, so as long as the heat exchanger is efficient at transferring heat from the oil to the coolant or vice versa, the oil temperature should quite closely match the coolant temperature.. I like the fact that the heat in the coolant helps to warm up the oil quicker with a Twinspark, on my GTA which has no heat exchanger the coolant gets hot very fast but the oil takes ages to get up to temperature, if you fitted an oil cooler it would either need to be thermostatically controlled or you would have to remove the heat exchanger to avoid over-cooling.
