Under the plenum on the bulkhead is a black box. This contains two quadrants one of which allows the throttle cable to turn 90° from the pedal into the engine bay. The other quadrant is for the bonnet release.
Undo the 2 or 3 bolts that fasten the cover to the box. The throttle cable from the throttle enters the box and the end of the bowden cable pushes through a slot in the chassis. The inner part fastens on to the quadrant in the same way as at the throttle end. The tricky bit is the outer sheathing. It is terminated in a shaped rubber bung with a slot in the rubber. The chassis of the quadrant box has a hole in it that locates in the slot in the rubber bung thing. You have to squeeze the rubber ( on the inside of the quadrant box ) and push it back through the hole.
I've never looked at the other half of the cable from the pedal to the quadrant. So I can't help there but it is probably similar.

EDIT : If you haven't already done so, you need to at least remove the plenum to get at the quadrant box. I'd say it's pretty much impossible otherwise.
