I think the synchro mesh is there to avoid the need for double de clutching, rather than removing the need for a clutch at all.
Straight forward it might be to bypass the clutch pedal but think of it this way - the rather clever VW DSG gearbox is full of computer controlled timing wizardry that is going to be much better at getting the timing right on matching engine and gearbox speed than any of us on here, and with relentless precision.
Does it still need a clutch? Er, yes.
On a bike you can probably get away without a clutch more so than in a car. But the bigger the cogs the less chance of them meshing effectively. Which is why Diesel Electric trains exist - it is just impractical to mesh gears on an engine the size of an Intercity 125 tractor unit. Much easier to keep it in one gear and drive a generator instead.
