is it a twin spark or a V6? if its the V6 with fly by wire throttle you aren't supposed to touch the butterfly valve with the engine off (it confuses the ECU). perhaps an ECU reset might sort it?
-edit- pretty sure you can sort this with an ECU reset. I forget the exact procedure, but its something like disconnect battery for 45 mins, re connect, leave in MAR for 90 secs, start and leave to idle for 15 mins, then take for a thrash....
it sounds like the car thinks the butterfly is in a different position to where it actually is, the throttle butterfly might be further closed than the ECU thinks it is.
-double edit- you mentioned a throttle cable, so its a twinnie...
