I had a new stat in my 2.0 TS last summer, and a new rad in January this year - so most of my cooling gear is new and should be expected to perform as per spec. The stat is definitely working well, as are the fans.
Here's what I see ...
Takes about 10mins (in current morning temperatures of near zero) to get to the first mark on the gauge (70?) and for warm air to flow into the cabin.
On the move around town (30-50mph) the gauge sits at about 80-85. On the move on the motorway (70-ish) it sits at just under 90.
In heavy traffic, it will go over 90 to about 100, when the first stage fan kicks in and brings it back down to just under 90.
I've never had the second stage fan kick in (even with the old rad), though I have confirmed it works OK by disconnecting the temperature sensor from the stat housing and getting 1st speed followed by 2nd speed.
