The guy in the elise was a poor driver IMO - the stock elise should be able to comfortably pull away from any 156/GTV in the corners, or to put it another way, there aren't that many cars made that will keep up with an elise being driven properly in the corners.
As for the handling issues TS vs V6 etc, there's a common issue being played out here:
- power on TS is insufficient out of the factory (and 10yrs later is probably worse still)
- handling on the V6 is insufficient out of the factory
Spend $$ on upgrading the power on the TS (IMO, the only way to go is turbo or supercharging)
Spend $$ on upgrading suspension on the V6 - springs, shocks, Q2, ARB.
I can get my TS professionally turbocharged including a customized chip designed and manufactured inhouse for around GBP5,000, or, I can buy a V6 (GBP1000-3000 changeover) and buy all the other stuff. Question is, how much does all the other stuff for the V6 cost, and which would be the better car at the end of the project?

A large factor in deciding which way to go is the thoughts I'm having of humbling many a driver in the turbo'd TS.
