In a p1 GTV/Spider there are two sensors! one is in the thermostat the other is in the engine block, the sensor in the engine block is the sensor that sends a reading to the guage.
First off, to eliminate the guage, get a friend to sit in car while you take the wires from the bottom sensor and earth them against the car, it the dial goes round to max then the dial is fine.
The 2nd test is to ge it under diagnostics and see what the true coolant reading is as the guages are often miles out!
If its reading the advised 80o odd then it could be the sensors? The NTC sensor is the one that screws into the thermostat and is not usually the problem? The other sensor in the engine block that has the two wires that go to the guage is a relatively cheap replacment at approx £20.

aqua, your problem sounds like a thermostat problem, there are numerous threads on the thermostat diagnosis and change. From memory, the top hose should remain cold and not warm at all until the thermostat is full open and the car has reached op temp, if you notice the top hose from the thermostat to the top of the radiator heating fairly quickly then your problem is very possibly the thermostat!?
