To be honest if you're going to be selling and that is your motivation, it's not really worth doing anything other than getting it as clean and tidy as you can. You're very unlikely to get your money back on any improvements or modifications unless they are a fundamental block to the cars value currently, which, it doesn't sound like they are.
If however you could be pursuaded to keep the car and want to re-inject some excitement, then things start to make more sense.
For the interior you can probably pick up the whole lot if someone is breaking a car. Keep an eye on here and on eBay and one will come along eventually. For me one the most dramatic features on a GTV can be to fit either a tan leather or red interior, depending on the colour of the car. Whole interiors often go quite cheap as they're a modest effort to fit... I guess those colours would go for a premium over black, but perhaps a few hundred would give you a shout as and when one crops up.
I would definitly change those wheels, I'm not keen on them at all. If you were lucky a car that donates the above may have some nice wheels to go with it. I really like the ones on my Cup, 17" polished Teledials, but I guess there won't be many sets around. A normal painted set may be easier to come by though...
With second hand wheels though you should bargain on new tyres as they'll be worth as much as the wheels in many respects...
But all said and done you're at the best part of a grand there... so selling your car and finding a nice V6 to your taste might be an easier and cheaper route?
