Should be 90º +/- 3º degrees in all conditions. Period. That's what these engines are designed to run at and that's what it should do when everything is working as it's supposed to.
Most temp gauges will read in steps so you don't get the constant 'dance' and I believe the 159/Brera no longer has the 'realtime' reading our older cars have.
If it's reading 90º in traffic, then it's doing what it should and you can rule out your sensor not working. If it lowers to 75º on the road, your thermostat is not working properly and is probably a faulty unit so take it back for an exchange. Just because it's new, doesn't mean it's faultless, it's an Alfa part remember...
If that doesn't work, then you have another problem (can't think what) but 90º is what you should be reading all the time.
