I don't know all sensors that can force the ECU into safe-mode, but the Alfa Diagnosic/Examiner can read the faulty sensor should there be any.
One of the things during safe-mode is that the wastegate solenoid is not powered anymore, but I do believe the ignition timing is also adjusted to a 'safe' setting -also influencing your engine's performance.
And the ECU will not go into safe-mode if you disconnect the wastegate solenoid, it just won't control the turbo pressure anymore. That is now done by your electronic wastegate controller.
What can happen; the ECU 'measures' the turbo pressure by looking at the air-flow sensor. More pressure is more air being pulled in, there is actually no real pressure sensor for the turbo's pressure. Standard the max. pressure is 1.1 bar, so if your electronic wastegate control goes over the 1.1bar, the ECU will also go into the safe-mode.
