How to change power steering fluid?

Hello everyone, how does one go about changing the fluid in the power steering? as mine is a dirty grey colour when it should be red?
I know how to refill it and bleed it, but not remove it in the first place.

This is actually for my Fiat coupe, but as the steering is identical to the GTV I thought I would post here. The Fiat Coupe forum isn't as good as this one..

Use a large syringe to take out as much as you can from the reservoir first. There are 60 and 120 ml. versions which will do the job nicely. Then bleed until fresh emerges from the bleed. Do not forget to keep topping up as necessary whilst bleeding it.

the easiest way I think is to disconnect the return pipe stick it in a bucket get someone else to start the car while you pour the new fluid in until you can see the new red stuff coming out of the return. Then stop the engine stick the return back on and your done - no need to bleed
