Just a thought, you could try fitting one of the larger capacity sumps from and early 2.0litre non-TS Alfa engine 105 series I think. This itself is quite a good oil cooler and the additional volume of oil will also help matters. The oil pressure sensors are also a bit prone to give dodgy readings. Check you are using the right oil, nothing too thin. There was an article in Retro cars about this engine recently...I shall find out what it said in there and get back to you. I know it advised against oil coolers on road cars, Alfa themselves recomended that you get the engine nice and warm before giving it some stick.
