Sorry to hear about your car, a few weeks ago I would have been happy for someone to do the same to mine but not now its fixed!
I would start collecting ads for cars in a similar condition to yours as evidence of its real value, otherwise you will be given the value of an old dog on its way to the scrappie. After all its the resale value not the 'glasses guide' that matters and after a certain age its totally down to what similar cars are sold for. It may also be worth having the car stored at a 'friendly' garage building up storage charges for them (at least in the mind of the insurer) which may speed up the claim. After all if its not road legal it should not be on the highway and you need the space in your drive/garage for your hirecar/replacement vehicle.
If you are prepaired to hassle them and provide evidence of how much it will cost to replace, then hopefully they will settle rather than build up costs fighting the case.
At the end of the day it depends on how much you need the money for a replacement car and they are bound to delay payment on the assumption that you need the cash to get back on the road.
In the past another drivers insurance company refused to provide me with a hire car during repairs to my car (his fault). I needed it for my own business and had contractural obligations, so I just threatened to hire one and claim it back through the courts. They came straight back with a hire car from their hirer, who no doubt had a special rate for them, rather than pay the full rate I would have had to pay plus legal costs. They all try it on and see how you react, so don't act like a doormat!
