Hmmm Oil temperature readings. Are they correct?

Hi all,

I have fitted an oil temperature gauge on my Sud and i am having some readings that seem rather strange to me. In normal driving it will take 20 mintes for the gauge to show anything more than 60 degs (the minimum) and after pushing the engine a little on the motorway it climbs up to 80 but no more. The outside temperature is 15 to 19 degs Celsius here in Greece.

These readings seem a little low to me but my mechanic assured me that they are normal and similar to those seen on some 33's with stock oil temperature gauge. He also said that i should expect anything over 80 only in prolonged hard driving on twisty roads or on a race track. Is he right or is the gauge lying?
