I wish I had one

I think should be something wrong with my 1.4 boxer or better with the cooling system. It is consuming a lot of water, let's say I need to fill the reservoir every 2-3 days depending on how long do I drive, especially when drove in traffic.
At the moment I'm using just water (no antifreeze), as there is no point of using antifreeze every 2 days.
Here is winter time and temps are around 6-8 degrees so I don't think is due to temperatures (evaporates)
In the worst scenario, the water might go inside the engine in one of the heads and then in one of the cylinders, but I experienced this two years ago when the car was consuming the same amount of coolant and I had to get out one of the heads and got the gasket replaced.
But during this problem I also experienced a very rough, unstable and erratic idle speed, the Air/Fuel gauge was showing funny and also had some lose of power with a lot of valve knocking. Also in the morning it became more and more difficult to crank the engine(morning or even during the day), by every day that was passing, after the car was sitting for few hours, until one morning it wouldn't crank at all and the engine wouldn't start because a floated cylinder.
THIS IS NOT HAPPENING...
There is no fuel smell in the water reservoir differently from the first time with the bad gasket, the car starts as soon as I touch the ignition key (the first start in the morning), power is fine and it idles normal and revs fine. I have checked for noticeable water leaks but I don't see any, just a slight crack on the thermostat (it gets a little wet but not enough to create this coolant loose in 3 days).
I have been using the heater a lot as it's cold now and I was wondering if the heater itself could cause coolant loose or not?
I don't really know what to think and where else to check?
Could you guys help me with your opinion, ideas and experience?
