1/8npt is the standard thread but I have seen some VW OEM VDO senders which are M10 thread, I have these which I planned to fit to my V6 but never fitted the oil temp sender.
I have one concern with sump plug sender and that is that having a sender sticking out from the sump plug could mean it could be prone to damage if you drove over something by mistake, I cant remember of the boxer how far the sump plug sticks out.
The other option is to fit a sandwich plate between the oil filter and fit the senders into that
