Personally I like the option of bare metal and full repaint, make it shiny and new. You never know whats lurking under the underseal.
It would be much cheaper to just touch up the bad bits. There is a camp in the classic car world that prefer a car to be as original as possible even if it isn't quite perfect.
The most valuable classics are always the unrestored, low mileage, perfect 'time warp' cars.
