alot of garages don't know what their doing on these engines these days, although they won't tell you so.
This is very true and discovered this by bravely looking at my own Dellorto carbs.
Had an acceleration issue and saw petrol was leaking from the diaphragms. They quoted me almost 300 USD just for labour!!!
So I started reading, reading and reading (and downloading all the manuals).
Dived into dismantling parts of my carbs, nervously mind you, and found out that the previous (so called alfa experts!!), did such a crap job that I'm doing all my own carb work and adjustment myself now.
Still practicing but getting much more confident and knowledgeable.
Messed them up a few times but learnt form my mistakes and got lots of great advice from this forum.
Now I know what most symptoms mean and can handle syncing, balancing, adjusting and changing parts in my Dellortos without too many issues.
In 2 weeks I'll be removing both carb units and using a service kit replacing all gaskets and washers etc.
Also going to polish them with my gladiator
