I not in a position to answer all your questions, but here is what I can tell you with a reasonable degree of surety:
#3 - Yes, the 'Sud's seats (and thus also those of the Sprint) can't be made more upright than a semi-reclined position.
#4 - Gear knobs are a push fit (they can be a right bugger to remove). Getting an original replacement may be difficult, though decent second-hand ones have appeared on eBay from time to time.
#5 - The prominent tappety knock at idle is likely to be the gearbox. You can tell it's the gearbox if the knock disappears as soon as you engage the clutch. Assuming this is the case, it is nothing to worry about, it's simply an Alfasud trait. As an aside, Alfa dealers in Australia were advised to overfill the 'Sud's gearbox if a customer complained about the knock!
