I've only driven a 3.0 Super. Fabulous engine, but eye-wateringly expensive to run if like me you use it in mixed urban/open road driving. A 2.0TS would be more tolerable if you do a lot of urban driving. Given the performance of the 3.0V6, fuel consumption of 27mpg I would say is quite reasonable if you do a lot of motorway miles. Around town this probably drops to 22mpg. The V6 is nose heavy but again this is only apparent on the twisty stuff. The 2.5 costs as much to run as the 3.0, so if cost is not an issue, go for the 3.0 v6.
I would add that the V6 has quite long gearing. With the 3.0 there is so much torque you can skip gears without any effort at all, but in the 2.5 you might find yourself stirring the gears a bit more than you would like.
