The stereo turning on at startup: Are we talking about the radio or the media player?
If it's the media player:
There is an "auto-start" setting, but that applies only for when you plug in a new usb-stick.
On older cars the only way avoid the media player to come up at start-up, was if the media player had been stopped with the voice command "Stop" before. Changing from media player to radio or turning the radio off with the volume button didn't stop the media player, but only paused it.
On newer cars - like my current - the media player also stays off, if it was stopped with the volume button. (Maybe in combination with the setting below ....)
Please try this: There is a setting "RADIO OFF function" which can be set to "00 MIN" or "20 MIN" - meaning the radio will turn off if you switch the ignition off, or the radio keeps playing for a maximum of 20 minutes after that. Set it to "20 MIN". If I remember correctly, this also had a positive effect on the turning on behaviour at startup - at least with one of my 3 939 cars.
On all my 3 939 cars I had never a problem with the climate control (AC compressor) staying off. But I made sure, that I never ordered the "anti-misting sensor". My theory is, that this sensor is a bit hyperactive and always wants to turn on the AC.
