just seen this thread, new question for you black jack, when you rebuilt the engine do you remember replacing the oil pick-up gasket, there is a small rectangular metal gasket which fits between the oil pick-up pipe and the oil pump...
for reference, I fitted a new oil pump when I rebuilt my engine (16 valve) about 7k miles ago and using 10w40 oil I get the following pressures, cold idle 4 bar, cold 3000rpm 6 bar, hot idle 3 bar, hot 3000 rpm 4 bar.
although a failing oil pump is a strong possibility, I have seen this a number of times on the 16v engine and unfortunately is a dealer only part at around £120.
finally, as said before, you are risking serious damage to the cams and more importantly the big end/main bearings in the engine by running with compromised oil pressure.
