Bilstein is a great choice, I have B12's I was lucky and got a full used seat for a great price (thanks Loz) huge improvement on stock dampers and springs.
one thing I will say is its almost a waste of time if you don't do something about the anti roll bars, they are way to light on the GT in stock form and if I had to give up the Bilsteins or Eibach ARB's it would have to be the Eibachs that stayed, such was the Huge difference they made to the handing.
do the ARB's first mate, that will give you a good idea of where to go with it after that point, you may even be happy with just that...either way it is the biggest bang for the buck suspension wise.
you can run the lowering springs with stock dampers if you want to go in stages, IMO its always useful to evaluate the effect of each mod so sometimes going in stages gets you a better outcome, at very least a better understanding of the impact of each change you make.
