The biting point on the clutch is quite high on the V6, or at least the 2 I have owned were. As long as it doesn't slip and changes gear ok, I wouldn't worry too much.
As for the other issues, it may be worth removing the back wheels and checking the brake pads have some material left. The symptoms you describe sounds as if the brake back plate is grinding on the disc. The brake pad warning light doesn't come on when the rear pads wear out either.
Wheel bearings can fail on the 156, but it is not very common, it often sounds like a humming noise and can get worse when cornering.
You will never be cool driving a Vauxhall.
