Not Happy Temperature Gauge at full!

Hi guys, here we go yet again! My alfa hates me. Ok so here goes, my alfa would sometmes over heat when i didnt have the air con on. I noticed the fan would sometmes not kick in. I changed the fan relay and it was fine. No over heating. But now, the coolant temperature gauge is permanently stuck on full. (130+). When i turn the ignition off, it slowly creeps back down to zero. When i turn it on again, even on cold, it jumps straight to 130+. Before it did this, a few seconds before, it was erratic. Would go up to 90, then to 70, then jump around and boom, stuck on 130+. Any help please?
