Engine cooling issue

Hi guys, need your help again...

having some issues with my 156 1.9 JTD..

While driving a good distance, the water temperature seems to be fluctuating around the 90 degrees.. every now and then goes a bit up and then goes back to 90.
Car drives fine, and i can't notice any loss of power from engine.
However if i stop the car and switch the engine off, leave it for 5 minutes and turn back on, i get the engine oil temperature warning with message to switch the engine off. Temperature at this stage is at max and red light comes on.
If i ignore the warning and drive off, temperature goes back down to 90 within few minutes.

i did notice the coolant disappearing and i keep adding water and coolant to top it up.

i checked the oil caps and i don't notice any dirt of reaction to indicate that liquid is mixing with oil.

any suggestion on what might be happening?
