surely that just indicates that the gauge is displaying say 15-20 degrees low on the actual temp? My gauge before the stat went and now with a new sta shows just under 90 while moving and goes up about 20 degrees when stationery until the fans kick in.

No, because the temperature shouldn't vary by 20deg.
Even in our current 0degC or lower temperatures, once the engine is warm it should sit at or close to 90degC all the time.

I recently change the thermostat on my wife's car - got a pattern one from EB Spares at a good price. When I'd changed it, the temperature on the gauge wasn't much different (about 70 on the gauge in normal running) - which was disappointing. I didn't have time to take it out again and deceided to leave it 'til the following weekend.

Lo and behold, over the course of the week, the average temeprature in normal running climbed up again and is now just over the 80 mark on the gauge - even though the weather is much colder!

I can only put this down to the disc inside sealing a bit better after a few opening-and-closing cycles. Does that often happen?

I have a brand new stat and radiator on my 145 QV and it sits at just under 80șC when hot.
My previous 146 was exactly the same. The fan seems to cut in at around 85șC on the gauge on both of them.
My V6 156 ran quite a bit hotter than the TS BTW.

Actually have the same prob, saw on some of the links there about better fuel economy etc. when the thermostat was replaced,

Think I'll def get this done sooner rather than later,

I replaced the thermostat on my 2.0 TS Selespeed (2000) as the gauge was struggling to get over 70, an hours work later and it now runs at 85-90, the MPG has improved and interestingly the local Alfa dealer was cheaper (for a proper Alfa part) for the thermostat than the auto parts place (for probably a Chinese copy).
