My wifes 1.8 T'spark gets through rear pads quite quickly. You might be down to the metal on one or more (which might mean the discs are knackered too now).
I'd in the heat shield - but that's a personal choice!
The temperature seems completely normal - As long as it's running above 70 all the time, (and not much abve 90 ever) I'd not worry.

You say the idle speed goes mad when you increase the revs slightly. What's it like at idle? IF you increase the revs just a little and you're not moving, the idle speed control valve will try to "fight" you to bring the idle speed back down to "normal". It should be OK after about 2000 RPM though. Try letting it idle with the handbrake on and put it in 5th. then slowly start to et the clutch out. As the revs drop, the valve should try to increasethe engine speed to bring them back. As soon as you put the clutch back in, they should go too high and then as soon as it realises that they're too high, it should bring them down again.
