DS2500 are well known for being noisy. They get better as they go on, although it does depend on whether you have bedded them in properly.
Pulling to the side is probably a disc issue, I do not see any need to change your pads.
A good way to silence the DS2500s is a track day, mine have been completely silent since the first one.
Regarding the type of disc, i would be very surprised if you notice any significant improvement in stopping power with drilled discs. A good set-up, favoured by many track day enthusiasts, is OEM discs, with performance pads, performance brake fluid and braided lines - giving bang for buck in that order.
