I found that with the cone removed the car made more noise, but less grunt. Put it back in and it ran rough for a bit then sorted itself out!
PS on the throttle reset thing, I tried to reset the throttle but the man at my local Alfa garage said it doesn't actually work and you need to plug the car into a diagnostics machine to clear codes. The car constantly learns. The resetting thing just makes it start from scratch again, seems to drive differently until it has relearnt its parameters again. Only time it does anything is if a component has been changed and you want to force a re-learn from factory pre-set parameters. Otherwise, just drive and it changes as it goes!
