Disconnect BOOSTER IN signal on back of head unit, see attached pic, top right connection.
This signal tells the unit there is a Bose amp fitted. This will re-enable SVC in the menu, some eq functions, and revert the outputs to high level.
The unit gets it's speed information from the car engine management unit via canbus CAN A & CAN B
Disadvantages are you might find the volume too uncontrollable at low level, the outputs should be low level when the bose is fitted, and disabling this signal makes them high again. The eq may take some fiddling to get a sound you like, but I have it disabled for SVC, set to high for higher volume boost at high speeds.
Either cut the wire, or if you've got a suitable pair of tweezers, insert to ease the locking tabs free on the terminal to try and pull the wire out.
