It's the rear pads separating from the discs at the rear as the wheel starts to rotate. Even though the handbrake mechanism has released, it's always possible that there's some stiction in the system between the pads and disc. It's quite normal, my GT does this, my old Peugeot did it and so does my sisters Clio 182.
This why it only happens when you first move off, after that point the stiction has been broken and it'll take another cold/damp night with the hand brake on before it builds up again.
