The internal cabin temperature is whatever you are comfortable with.
Some people like 18degC, some 20, others 24. It is what ever you want it to be.
As for engine temp, the fan will be constantly pulsing when the A/C is on, this causes the engine temperature to remain more constant. With the A/C off the fan will not run until the coolant temp goes slightly higher.
As long as it is still under 100degC you are fine.
Remember that 100degC is still not boiling: 1) because the coolant is under pressure, which raises its boiling point. and 2) because the coolant is not water, so it has a higher boiling point anyway (the coolant I use will not boil until 180degC...)
