Hello and help please

Im having a bit of mystery with my v6 cf3 temperature readings.
Plug into computer and it reads 100-105 degrees and when u floor a throttle it goes all the ways up to 4500 degrees,that should melt everything around.
And when the ignition is on mar position it reads -40 degrees.

So i decided to change temperature sensor in thermostat,
And after few miles of driving temperature gauge goes 3/4 ways up until fan kicks in,but checked it by expansion tank and there is no obvious signs of overheating.

Does anybody know how to fix this dilemma?

What is your computer reading now after you have changed the thermocouple?

What are you using as OBD? FES?

Does the temp go down after the fan kicks in? Is the 3/4 reading when you are cruising or traffic? Idle?

The temp reading might be an earth issue.

Check your rad as well.
