Car Off road once

I know this has been covered in several threads but i havnt found anyone who has fixed the problem and reported back, which would have answered my question.
I have recently changed the head gasket in my x reg 1.8 tspark. the whole operation went well minus the 3k revs variator issue. As soon as i removed the solenoid connection the car ran through all revs sweet as, just without the variator kicking in for the extra performance. Anyway...
Drove the car to work and back for a few test runs, covered around 40 miles between 4 journeys and car ran fine. Next day drove into town and on route back, after covering about 15 miles with engine on for about an hour, i noticed the temp gauge was reaching the end of the limit. As soon as i realized this i pulled off the main road and killed the engine. I popped the bonnet and the coolant reservoir was bubbling. I released the pressure slowly maintaining distance using my adjustable grips. Water and air pressure came out until i managed to get the cap off completely. I left the engine 20 minutes and started again and it ran fine but kept overheating.
The car is back on my drive and runs fine on idle and sounds perfect through the revs but heats up in roughly 5 minutes. The fan kicks in at 90 but doesn't cool the system down.
hose to top of the radiator gets hot but hose at bottom of the radiator stays cold.
pressure builds up in resevoir and bubbles out water if i leave the cap off.
no smell of exhaust fumes coming out of resevoir or smoke, oil etc.
after disconnecting pipes on top of radiator water flows out when refilling, also if disconnected from bottom of radiator.
i have been told it could be one of the following three issues.
1. Thermostat has gone. I have seen this is unlikely as fails open and would keep the engine colder for longer and more than likely wouldnt overheat. If this has failed closed is there a test for this?
2. head gasket failed causing exhaust fumes to flow into coolant. this has just been changed correctly and there is no sign of this due to lack of smell, no lack of performance and flow of engine. also standard funmes from exhaust and no steam.
3. water pump. this one is new to me.
Hope you can help and i hope i have covered everything.
