Don't get a new seat. For about £40 you can get the foam refinished and a new panel put in. They remove the burnt fabric panel, pour a liquid on the burnt foam which causes it to re-expand, trim it and reupholster. Do a quick google for car upholstery in your area.
Some can even patch repair using a small swatch cut from somewhere unobtrusive, like an unseen part of the head restraint on the rear of the back seat squab. Well worth it.
As for brakes, it's most likely tracking/balancing. The 156 is more susceptible than some cars to variations in tracking. If you are in the South you may want to try a ProTyre depot or their parent company, Micheldever tyres.
