As to the oil temp, i actualy thought it is easier. Have a look here, but it is in german http://tuning.alfisti.net/
Go to the 147 link, and than to elektrik. There is an item "VDO Öltemperaturgeber - Peilstab" for 25 euro. The photo is bad, but it looks like the oil level measuring stick with integrated temp sensor. If it is so, you can easily change the oil stick to the new one and wire it.
There is an pressure sensor called "VDO Öldruckgeber" and there is written it has stock oil pressure switch connector you mention. I just did not know, where to mount it. But if you say I have to remove the exhaust and other parts, it is probably not so easy. I will probably have to take the car into a garage and ask somebody to do it for me.
