Thermostat or Radiator issue?

Hi all,

When I got my car a few months back I had the typical thermo issues where the temp never got over 60-70 unless crawling in traffic then it would suddenly shoot up etc..

Got the thermo replaced, everything's been fine for the last 3 weeks, running at 88 ish except when in traffic, it will try to creep up to 100 but the fan kicks in and brings it back down which is normal I presume?

Anyway, yesterday on the way home from work I was doing normal driving and I look and it's on 100 and suddenly dropped down to 60 ish in the blink of an eye.. it then proceeds to quickly climb back up past 88 and towards 100 again and the fan kicks in.. The fan is kicking in every couple of minutes no matter what kind of road or traffic. This was during a short journey and i'd only been driving a couple of miles.

What on earth has happened??

I checked the radiator reserve tank and it is full, I used red coolant when the thermo was replaced (the same colour that was already in the system).. But like I say, its been fine for the past 3 weeks no matter how long the journey.
